Broccoli Cheddar Muffins 🥦🧀
A savory and delicious muffin perfect for any time of the day.
Ingredients:
1 1/2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1 cup whole milk
1/4 cup unsalted butter, melted
2 large eggs
1 cup cheddar cheese, shredded
1 cup broccoli florets, blanched and chopped
1/4 cup parmesan cheese, grated
Instructions:
1️⃣ Oven Prep:
Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
2️⃣ Mix Dry Ingredients:
In a large bowl, combine the flour, baking powder, salt, and black pepper.
3️⃣ Mix Wet Ingredients:
In another bowl, whisk together the milk, melted butter, and eggs.
4️⃣ Combine Mixes:
Stir the wet ingredients into the dry ingredients until just combined. Fold in the shredded cheddar cheese and chopped broccoli.
5️⃣ Prepare Muffins:
Spoon the batter into the prepared muffin cups, filling each about two-thirds full. Sprinkle the tops with grated parmesan cheese.
6️⃣ Bake:
Bake in the preheated oven for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
7️⃣ Cool & Serve:
Let the muffins cool slightly in the pan before transferring them to a wire rack. Serve warm.
