Best Italian Meatloaf

Ingredients:

  • 1 ½ lbs ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs (Italian seasoned, or plain with added herbs)
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup milk
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded mozzarella cheese (for stuffing)
  • 1 cup marinara sauce (plus extra for serving)
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat Oven:
    Set your oven to 375°F (190°C). Grease a loaf pan or line a baking sheet with parchment paper.
  2. Mix Meatloaf Base:
    In a large bowl, combine ground meat, breadcrumbs, Parmesan, eggs, milk, onion, garlic, Italian seasoning, red pepper flakes, salt, and black pepper. Mix until just combined, being careful not to overwork the meat.
  3. Shape and Stuff:
    On a piece of parchment paper, shape the meat mixture into a rectangular layer, about 1 inch thick. Sprinkle the shredded mozzarella in a line down the center, then roll the meat mixture over the cheese to form a loaf. Pinch the seams to seal.
  4. Place in Pan:
    Transfer the loaf carefully to the prepared pan or baking sheet.
  5. Top with Marinara:
    Spread the marinara sauce evenly over the top of the meatloaf.
  6. Bake:
    Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C). Let the meatloaf rest for 10 minutes before slicing.
  7. Serve:
    Slice the meatloaf and serve with extra warm marinara sauce and a sprinkle of fresh parsley. Pair with garlic bread or a side salad for a complete Italian-inspired meal.

Pro Tips:

  • For extra flavor, add a layer of sautéed spinach or roasted red peppers on top of the mozzarella before rolling.
  • Swap mozzarella for provolone for a sharper cheese flavor.
