Peanut Butter No-Bake Cookies

Ingredients:

  • 1 cup (250 ml) granulated sugar
  • 1 cup (250 ml) brown sugar
  • 1/2 cup (125 ml) butter (1 stick)
  • 1/2 cup (125 ml) milk
  • 1 teaspoon vanilla extract
  • 1 cup (250 ml) creamy peanut butter
  • 3 cups (750 ml) quick oats

Instructions:

  1. Prepare Your Workspace:
    Line a baking sheet or countertop with parchment or wax paper. This will be where the cookies cool and set.
  2. Make the Sugar Syrup:
    In a medium saucepan, combine the granulated sugar, brown sugar, butter, and milk. Heat over medium heat, stirring frequently, until the mixture comes to a rolling boil.
  3. Boil Briefly:
    Allow the mixture to boil for 1 minute (set a timer to avoid overcooking). Stir occasionally to prevent scorching.
  4. Add the Good Stuff:
    Remove the saucepan from heat. Stir in the vanilla extract and peanut butter until smooth and fully incorporated.
  5. Mix in the Oats:
    Add the quick oats to the peanut butter mixture, stirring until well combined.
  6. Shape the Cookies:
    Drop spoonfuls of the mixture onto the prepared parchment or wax paper. Use a spoon or scoop to form cookie shapes.
  7. Let Them Set:
    Allow the cookies to cool at room temperature for about 30 minutes or until they are firm.

Tips:

  • For a chocolaty twist, add 2 tablespoons of unsweetened cocoa powder to the sugar mixture before boiling.
  • Want some texture? Stir in chopped nuts, shredded coconut, or mini chocolate chips before shaping the cookies.
