Instructions:

Step 1: Cook the Rice

  1. In a medium saucepan, combine the rice and water.
  2. Bring to a boil, then reduce the heat to low. Cover and simmer for 15-20 minutes, or until the rice is tender and water is absorbed.

Step 2: Simmer the Pudding

  1. Add 3 cups of milk, sugar, and salt to the cooked rice.
  2. Cook over medium heat, stirring frequently, until the mixture thickens slightly (about 15 minutes).

Step 3: Temper the Eggs

  1. In a small bowl, whisk together the eggs and the remaining 1 cup of milk.

Step 4: Final Cook and Flavoring

  1. Reduce heat to low and cook for 5-10 minutes, stirring constantly, until the pudding thickens to your desired consistency.
  2. Remove from heat and stir in the vanilla extract (and raisins, if using).
