Ingredients:

  • 4 large russet or Yukon Gold potatoes
  • 3 tablespoons olive oil (or melted butter)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme or rosemary
  • Salt and black pepper, to taste
  • Optional toppings: shredded cheese, chopped parsley, or sour cream

Instructions:

  1. Prep the Potatoes:
    • Preheat your oven to 425°F (220°C).
    • Wash and dry the potatoes. Peel if desired, but leaving the skin on adds texture.
    • Slice each potato in half lengthwise. Lay them flat side down on a cutting board.
  2. Score the Potatoes:
    • Using a sharp knife, score the flat side of each potato with shallow crisscross cuts. Be careful not to cut all the way through.
  3. Season the Potatoes:
    • Place the scored potatoes on a sheet pan, flat side up.
    • Drizzle with olive oil or melted butter, ensuring it seeps into the cuts.
    • Sprinkle with garlic powder, paprika, thyme or rosemary, salt, and pepper.
  4. Roast to Perfection:
    • Roast in the preheated oven for 40-50 minutes, or until the potatoes are golden brown and crispy on top. The scoring helps them cook faster and ensures crispy edges.
  5. Optional Toppings:
    • For extra flavor, sprinkle shredded cheese over the potatoes during the last 5 minutes of baking.
    • Garnish with chopped parsley or serve with a dollop of sour cream.

Tips:

  • Even Cooking: Choose potatoes of similar size to ensure they cook evenly.
  • Crispier Potatoes: Turn on the broiler for the last 2-3 minutes to crisp up the tops further.
