Ingredients
For the Meatballs:
- 1 lb (450g) ground beef or pork (or a mix)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
For the Filling:
- 1/2 cup shredded mozzarella cheese
- 1/4 cup finely chopped spinach or kale
- 1/4 cup diced bell peppers (any color)
- 1/4 cup finely diced mushrooms (optional)
For the Sauce:
- 2 cups marinara or tomato sauce
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp olive oil
Instructions
- Preheat the Oven
Preheat your oven to 375°F (190°C). - Prepare the Meatball Mixture
In a large bowl, combine the ground meat, breadcrumbs, Parmesan cheese, egg, garlic, onion powder, Italian seasoning, salt, and pepper. Mix well until evenly combined. - Make the Filling
In a small bowl, mix together the mozzarella cheese, chopped spinach, bell peppers, and mushrooms. Set aside. - Shape the Meatballs
Take a small portion of the meat mixture (about 2 tablespoons), flatten it into a disk, and place a small amount of the filling in the center. Gently fold the meat around the filling and roll it into a ball. Repeat with the remaining mixture and filling. - Cook the Meatballs
Heat olive oil in a large oven-safe skillet over medium heat. Sear the meatballs for 2-3 minutes on each side until golden brown. Remove the meatballs and set aside. - Add the Sauce
In the same skillet, pour in the marinara sauce and red pepper flakes. Stir to combine. Place the seared meatballs back into the skillet, ensuring they’re covered in the sauce. - Bake
Transfer the skillet to the oven and bake for 15-20 minutes, or until the meatballs are cooked through and the cheese is melted inside. - Serve
Garnish with fresh parsley or additional Parmesan cheese. Serve with pasta, rice, or crusty bread for a complete meal.
