Greek Chicken Gyros

Ingredients

For the Chicken Marinade:

  • 1 1/2 lbs (700g) boneless, skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 3 tablespoons Greek yogurt
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and excess water squeezed out
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried dill)
  • Salt and pepper to taste

For the Gyros:

  • 4-6 pita bread or flatbreads
  • 1 small red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup feta cheese, crumbled
  • Fresh parsley or mint leaves, chopped (optional)

Instructions

  1. Marinate the Chicken:
    • In a large bowl, combine the olive oil, Greek yogurt, minced garlic, lemon juice, red wine vinegar, dried oregano, ground cumin, smoked paprika, salt, and black pepper.
    • Add the chicken thighs or breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for best flavor.
  2. Prepare the Tzatziki Sauce:
    • In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, chopped dill, salt, and pepper. Mix well and refrigerate until ready to use.
  3. Cook the Chicken:
    • Preheat your grill or skillet over medium-high heat. Remove the chicken from the marinade and cook for 5-7 minutes per side, or until fully cooked and slightly charred. The internal temperature should reach 165°F (74°C).
    • Let the chicken rest for a few minutes, then slice it into thin strips.
  4. Assemble the Gyros:
    • Warm the pita bread or flatbreads on the grill or in a dry skillet.
    • Spread a generous amount of tzatziki sauce on each pita.
    • Top with sliced chicken, red onion, cherry tomatoes, cucumber, feta cheese, and fresh herbs if using.
  5. Serve:
