Pecan Pie from an Island

My husband, who usually doubts trying new recipes, couldn’t resist going to the kitchen because of the smell. Let’s remember the person who was very happy and excited when they saw something. It was very popular! Our family loved the food very much because it reminded us of happy times on sunny island vacations.

Ingredients: 1 pie crust (you can make it at home or buy it at the store)
1 and 3/4 cups of sugar 1 cup of pecans, chopped into small pieces
1 cup of crushed pineapple, without juice.
1 cup of grated coconut
1/2 cup of melted unsalted butter (1 stick)
5 eggs at room temperature
1 spoon of cornstarch
1 tablespoon of regular flour
1/4 of a small spoon of salt

How to Prepare Island Pecan Pie

Heat the oven to 300 degrees Fahrenheit.
In a big bowl, mix sugar, eggs, cornstarch, flour, and salt until well blended.
Add melted butter, then gently mix in pecans, pineapple, and coconut.

Put the pie crust in a round baking dish and pour the pecan mixture over it. Press the edges of the crust together.

Put the baking dish in the oven and bake for 55 minutes, or until it is almost cooked.
Put aluminum foil on top and bake for 15-20 minutes more, or until the middle is firm.
Take out of the oven and decorate with whipped cream and toasted coconut. Have fun!
