Taco Casserole

Ingredients:
1 lb ground beef or turkey
1 packet taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (canned or frozen)
1 can (10 oz) diced tomatoes with green chilies, drained
2 cups shredded cheddar cheese
1 bag (10 oz) tortilla chips, crushed
1/2 cup sour cream
Chopped green onions and fresh cilantro, for garnish
Instructions:

Cook Meat: In a large skillet, cook ground beef or turkey until browned. Drain excess fat, then add taco seasoning and mix well.
Combine Ingredients: Stir in black beans, corn, and diced tomatoes. Simmer for 5 minutes until warmed through.
Layer Casserole: In a greased 9×13-inch baking dish, layer half of the crushed tortilla chips, followed by the meat mixture. Top with sour cream and half of the cheese.
Add Topping: Add the remaining chips on top and sprinkle with the remaining cheese.
Bake: Bake at 350°F (175°C) for 20 minutes, until cheese is melted and bubbly.
Garnish and Serve: Top with chopped green onions and cilantro, and serve warm.
Notes:
Serve with salsa or guacamole for extra flavor.
