Cajun Grilled Chicken with Alabama White Sauce
Ingredients:
For the Cajun Grilled Chicken:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp Cajun seasoning
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper (adjust to heat preference)
- Salt and black pepper, to taste
For the Alabama White Sauce:
- 1 cup mayonnaise
- 1/4 cup apple cider vinegar
- 1 tbsp lemon juice
- 1 tbsp prepared horseradish
- 1 tsp Dijon mustard
- 1 tsp garlic powder
- 1/2 tsp cayenne pepper (optional for extra kick)
- 1/2 tsp black pepper
- 1 tbsp sugar
- Salt to taste
Instructions:
1. Prepare the Chicken:
- In a small bowl, mix Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, cayenne, salt, and black pepper.
- Rub the chicken breasts with olive oil and coat evenly with the seasoning mixture.
- Cover and refrigerate for at least 30 minutes (or up to 4 hours) to let the flavors marinate.
2. Make the Alabama White Sauce:
- In a medium bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish, Dijon mustard, garlic powder, cayenne (if using), black pepper, sugar, and salt.
- Cover and refrigerate until ready to use. The flavors improve as it sits.
3. Grill the Chicken:
- Preheat your grill to medium-high heat (about 375–400°F).
- Lightly oil the grill grates to prevent sticking.
- Grill chicken breasts for 6–7 minutes per side, or until the internal temperature reaches 165°F. Avoid overcooking to keep the chicken juicy.
4. Serve:
- Transfer the grilled chicken to a serving platter.
- Generously drizzle Alabama White Sauce over the chicken, or serve it on the side for dipping.
