Cajun Grilled Chicken with Alabama White Sauce

Ingredients:

For the Cajun Grilled Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried thyme
  • 1/4 tsp cayenne pepper (adjust to heat preference)
  • Salt and black pepper, to taste

For the Alabama White Sauce:

  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1 tbsp lemon juice
  • 1 tbsp prepared horseradish
  • 1 tsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper (optional for extra kick)
  • 1/2 tsp black pepper
  • 1 tbsp sugar
  • Salt to taste

Instructions:

1. Prepare the Chicken:

  1. In a small bowl, mix Cajun seasoning, smoked paprika, garlic powder, onion powder, thyme, cayenne, salt, and black pepper.
  2. Rub the chicken breasts with olive oil and coat evenly with the seasoning mixture.
  3. Cover and refrigerate for at least 30 minutes (or up to 4 hours) to let the flavors marinate.

2. Make the Alabama White Sauce:

  1. In a medium bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish, Dijon mustard, garlic powder, cayenne (if using), black pepper, sugar, and salt.
  2. Cover and refrigerate until ready to use. The flavors improve as it sits.

3. Grill the Chicken:

  1. Preheat your grill to medium-high heat (about 375–400°F).
  2. Lightly oil the grill grates to prevent sticking.
  3. Grill chicken breasts for 6–7 minutes per side, or until the internal temperature reaches 165°F. Avoid overcooking to keep the chicken juicy.

4. Serve:

  1. Transfer the grilled chicken to a serving platter.
  2. Generously drizzle Alabama White Sauce over the chicken, or serve it on the side for dipping.
