Ingredients

For the Cake:

  • 2 cups (250g) all-purpose flour
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves (optional)
  • 1/4 tsp ground ginger (optional)
  • 1 1/2 cups (300g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 1 cup (240ml) vegetable oil
  • 4 large eggs
  • 1 tsp vanilla extract
  • 3 cups (300g) finely grated carrots
  • 1 cup (120g) chopped walnuts or pecans (optional)
  • 1/2 cup (75g) raisins (optional)
  • 1/2 cup (120ml) crushed pineapple, drained (optional for extra moisture)

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 4 cups (480g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1-2 tbsp milk or heavy cream (optional, for desired consistency)

Instructions

  1. Prepare the Oven and Pans
    Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. Mix the Dry Ingredients
    In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  3. Combine the Wet Ingredients
    In a large bowl, whisk the granulated sugar, brown sugar, and oil until combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
