Smothered Chicken and Rice

This creamy and flavorful smothered chicken and rice dish combines tender chicken breasts, a rich creamy sauce, and perfectly cooked rice, making it a comforting meal that everyone will enjoy!


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1 1/2 cups long-grain white rice
  • 2 cups chicken broth (for cooking rice)
  • 1 cup shredded mozzarella cheese (optional)

Instructions

  1. Cook the Rice
    • In a medium saucepan, bring 2 cups chicken broth to a boil. Add the rice, reduce the heat to low, cover, and cook for about 15-20 minutes until the rice is tender and the liquid is absorbed. Set aside.
  2. Prepare the Chicken
    • Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, and paprika.
    • Cook the chicken for 6-8 minutes per side, until golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
  3. Make the Creamy Sauce
    • In the same skillet, add the diced onion and sauté for about 3-4 minutes until softened.
    • Add the minced garlic and cook for an additional 1 minute.
    • Stir in the cream of chicken soup, chicken broth, and heavy cream, and bring to a simmer. Add the dried thyme, and season with additional salt and pepper to taste. Let the sauce simmer for about 5 minutes until thickened.
  4. Combine the Chicken and Rice
    • Add the cooked rice to the skillet with the sauce and stir until well coated.
    • Place the cooked chicken breasts on top of the rice mixture. Spoon some of the sauce over the chicken.
  5. Optional: Add Cheese
    • Sprinkle shredded mozzarella cheese over the chicken for a cheesy topping (optional). Cover the skillet and cook on low for 5 minutes until the cheese is melted and the dish is heated through.
  6. Serve
    • Serve the smothered chicken and rice hot, garnished with fresh herbs if desired.

Tips:

  • Add sautéed mushrooms or spinach for extra flavor and texture.
  • For a spicier dish, try adding a bit of cayenne pepper or crushed red pepper flakes to the sauce.
