Cheesy Vegetable Toast Sandwich

Ingredients:

  • 8 slices of bread (white, whole wheat, or sourdough)
  • 1 cup grated mozzarella or cheddar cheese (plus extra for topping)
  • 1/2 cup diced bell peppers (red, green, or yellow)
  • 1/2 cup diced tomatoes (seeded to avoid sogginess)
  • 1/4 cup chopped fresh parsley or cilantro
  • 2 green onions, finely sliced
  • 1/4 tsp red chili flakes (optional)
  • 1/2 tsp garlic powder (optional)
  • Salt and pepper, to taste
  • 2 tbsp butter (softened)

Instructions:

  1. Preheat the Oven or Grill Pan:
    • Preheat your oven to 375°F (190°C) or use a grill pan for stovetop cooking.
  2. Prepare the Vegetable Topping:
    • In a bowl, mix the diced bell peppers, tomatoes, parsley, green onions, and 1 cup of cheese. Season with garlic powder, chili flakes (if using), salt, and pepper.
  3. Assemble the Sandwiches:
    • Butter one side of each bread slice. Place 4 slices butter-side down on a baking tray or grill pan.
    • Spread a generous amount of the vegetable-cheese mixture on the unbuttered side of each slice.
    • Top each with another slice of bread, buttered side facing up.
  4. Add Cheese Topping:
    • Sprinkle extra cheese and a little vegetable mixture on top of each sandwich for a cheesy crust.
